About the restaurant
A small dining room, big pots
Trattoria Sole opened in 2014 with eight tables and one oven. Today there are 22 tables, but the pasta is still rolled by hand every morning and the menu is written on the board according to what came from the market.
The chef is from Bologna, the pastaio from Plovdiv. Half the wines are from small Bulgarian cellars because they are good, not because they are fashionable.
